Cooking up a Storm

The Catholic Charities of the Diocese of Lexington recently started a financial literacy program called Lasting Change which is specifically geared toward unbanked, low-income individuals who rely upon community organizations to supplement their basic needs. As part of their sessions, they offer a dinner and they thought it would be a great opportunity to do some nutrition education, along with some cooking experience.chilicookingnight

Enter Seedleaf.

It was a wild night and a frenzy of activity, but when the smoke cleared and the soap bubbles settled, a fabulous meal had been prepared by the joint efforts of 23 adults.

The Menu? Vegetarian chili, cornbread, salad, and banana pudding.

All in all, this was a wonderful opportunity for us at Seedleaf to help spread the joys of healthy meal preparation, and hopefully enlighten a few more about the ease and savings that can be had through meal preparation.

We crammed a lot of information in our limited 1 hour allotment, included balanced meal planning, economical shopping tips, the importance of local and organic, and the convenience of batch cooking.
